I would love to get Dr. Bikman's opinion on something. People often say that there are good carbs and bad carbs. They say this because since complex carbs convert slower that they are better than simple carbs. I wonder if complex carbs may actually be worse. Since they do convert slower the insulin response is longer.
Thank you Mike for this interview with Dr. Benjamin Bikman. Every time I watch an interview or presentation that Dr. Bikman is featured in, I always feel like I learned something new. Having immersed myself in health and nutrition for years, I rarely learn something truly ground breaking. Dr. Bikman is one of those professionals that consistently surprises me. Your short interview with him here, where he discusses how a lower insulin level can increase metabolism, is a revelation. I would love to see how the calories in calories out dogmatists – like Dr. Layne Norton – feel about this.
