  4. Lactobacillus eats uses lactose, a type of sugar, to create yogurt. Bacteria is somehow not killed by the sugar intrinsic to fruit, but it is killed by added sugar? I think you're oversimplifying to the point where the information that you're presenting is inaccurate. In the case of yogurt and fermented foods, sugar feeds bacteria. When making coconut milk yogurt, sugar is added because coconut is naturally low in sugar and the bacteria need a sugar to feast on to make their acid. Sugar can act as a food preservative (i.e. slow bacterial growth) due to its hydroscopic properties, but I don't think that's an issue with the types of bacteria found in a commercial yogurt cup. Correct me if I'm wrong…

  14. Bobby — keep your eyes peeled for a brand called Coyo! The texture is like whipped cream and the ingredients are phenomenal. Unfortunately, the mixed berry contains natural flavors, but the others are very impressive.
